Old Elk 'Elks Lodge 150th Anniversary Collaboration' Blended Straight Bourbon Whiskey
The Old Elk recipe includes three quality ingredients - malted barley, rye, and corn. Old Elk Bourbon uses four times more malted barley than conventional recipes and a slow cut proofing process. We invested in a higher malted barley recipe to deliver a unique flavor profile that has a spice similar to a rye, but smooth characteristics from the malted barley. We were very intentional to use the minimal amount of corn, to allow for larger quantities of malted barley. The high malted barley content adds almond notes and a sweet, smooth character, the rye adds a bit of spice, and the corn provides a robust bourbon foundation. Our slow cut proofing enhances the bourbon's flavors through a patient process where full barrel proof bourbon is cut, then left to rest, and repeated. While traditional proofing takes 24-48 hours, our slow cutting technique, developed over several test periods, takes significantly longer. This intentional time period allows the flavors to marry between stages, until the exact character is achieved, creating an overall smoother bourbon.
