We have tamed this boisterous spirit with three, freshly emptied barrels that previously matured deliciously sweet PX Sherry, from Bodegas Ximénez- Spínola, our partners in Jerez, Spain. To fully showcase this youthful 6-year-old peated Islay spirit, our team have kept the maturation short. For its final 7 months, this spirit has matured in PX Sherry hogsheads with the aim of introducing a delicate, fruity character to the heavy, smoky Islay personality.
